Creamy Broccoli Salad

A few weeks ago I was trying to come up with a low carb alternative to my favorite sides (e.g. mashed potatoes, pasta, etc.) and I opened the fridge and stared into it for a few minutes. Spinach & Artichoke Orzo

Another recipe with two of my favorite ingredients – spinach and artichokes. This was my first experimentation with orzo – and it turned out really well. Next time – I’m determined to find a way to make it using my rice maker! Great as a side for a Mediterranean meal or alone for a fantastic vegetarian meal!

Red Smashed Yogurt Potatoes

I loove smashed potatoes … but all of that butter is not good news for bikini season – so I came up with a different way to make smashed potatoes! It doesn’t taste exactly the same but it had a bit of a tang to it from the Greek yogurt that I actually looove.
