Garlic Lime Fiesta Chicken

Great mid-work-week entree option. Fast, versatile and yummy. Toss this Garlic Lime Chicken over a leafy salad, pasta with cream sauce, chop it up and make a chicken salad with it, roll it up in a tortilla with cheese, lettuce and sour cream – the possibilities are endless! Perfect for bringing lunches to work.
- 2 boneless chicken breasts
- Juice of 1.5 Limes (or buy the lime juice in a plastic lime thing)
- 2 cloves of minced garlic
- pinch of basil
- EVOO
- Dash of Cajun seasoning
- Cut the chicken breasts into chunks and toss into a bowl with the juice of one lime.
- Add to the bowl the garlic, basil, 2 tbs of EVOO and a dash of the Cajun seasoning. The Cajun is just for a little bit of depth to the flavor… not enough to make it spicy.
- Allow the chicken to marinate in the fridge for 30 minutes.
- Heat up a frying pan on the stove top and add the chicken, pouring the extra marinade on top.
- As chicken begins to brown, be sure to turn it to cook all sides.
- Halfway through cooking – add the juice of the last 1/2 lime to the chicken. This makes the chicken extra juicy!
