A Quiche … Capisce??

IMG_3183-1I looove making a quiche to have for breakfast for the whole week! And they’re great for getting rid of extra vegetables you have laying around but aren’t in the mood for another strifry. This one I made with ham & swiss & broccoli & artichokes! Soo good.

  • 1 – Pillsbury Pie Crust
  • 1 Cup – Half & Half
  • 4 – Eggs
  • 1 Cup – cooked Broccoli chopped up (I like the texture better than just thawed out Broccoli florets like some recipes call for)
  • 1 Cup – ham (leftovers, lunch meat, anything)
  • 6oz – Quartered Artichoke Hearts, rinsed, drained, dried and chopped up
  • 1 Bag – shredded Swiss cheese
  • Salt & Pepper to taste
  1. Preheat the oven to 375F.
  2. I always start with one of Pillsbury’s pie crusts – I buy a bunch of them and just keep them in the freezer… let it thaw out on the counter top completley before rolling out.
  3. Place into pie tin (glass or Pyrex is best – but metal will be just fine too) and fold over excess pie crust to make a thicker edge – leaving about a centimeter of pie crust sticking out over the edge. Choose a starting place and crimp the edge of the dough by pinching on either side of a centimenter of dough with your thumbs and pointer fingers and smooshing them together. Go all the way around until you complete the circle and then stand back and think about how proud Martha would be!!
  4. In a bowl, slightly beat your 4 eggs and add the Half & Half. At this point I throw a lot of pepper into the bowl because I am in loove with it, but add to your taste. Beat together and set it aside.
  5. Into the pie crust, add your Ham, most of the Swiss, artichokes pieces & broccoli. Mix them around with your hands and make sure that it’s evenly layered.
  6. Pour egg mixture on top of your “quiche toppings” and sprinkle the last bit of swiss cheese on the top.
  7. Carefully set quiche in the oven and start keeping an eye on it after about 35 minutes. Check to see when the top gets golden brown (like in the picture). Take it out when it’s reached the goldenness that you want and just to make sure, put a toothpick in and make sure it comes out clean!
  8. Let cool and enjoy!
